Cheese Buns

My 15 year old loves Cheese Buns. They are great for lunches, so today I made my own.

1 1/2 cups warm water

2 packages of active dry yeast

1 teaspoon of sugar

1 cup of margarine

2 teaspoons Himalayan sea salt

About 6 cups of Flour

2 eggs

2 cups of grated cheese

Sprinkling of Herbs

In large bowl combine 1/2 cup of warm water with yeast and 1 tsp. of sugar. Let stand about 5 minutes until foamy. Stir in remaining 1 cup warm water, 1/2 cup melted margarine, salt and 2 1/2 cups of flour.

Mix at low speed on electric mixer and add in 1 egg and 1 cup of flour.

Gradually add in remaining flour and 2nd egg, mixing the entire time until it forms a soft dough.

Place dough in greased, covered bowl in a warm place for a couple of hours until dough doubles in size.

Punch down dough and kneed in cheese and herbs.

Form about 24 rolls and place in greased pan. Cover and let rise again for a couple more hours.

When they are big and puffy, preheat the oven to 400 Degrees.

At this point I melted the other 1/2 cup of margarine and spooned it evenly over each of the buns.

Next bake for 20 minutes.

Weekly Waffles

Hi again,

Today I did some weekly baking, in order to prepare the for busy work/ school week ahead.

I made these Delicious waffles, which I will freeze for the toaster to replace Eggo’s next week.

I thought I would share this great recipe:

1 3/4 cups Flour

4 tsp Baking Powder

2 tsp Brown Sugar

1 tsp Himalayan Sea Salt

1/4 cup melted Butter

2 Eggs

1 3/4 cup Almond Milk

1/2 tsp Vanilla

In a medium bowl, mix together all of the Dry Ingredients.

In another bowl melt your butter, and add to it Milk, Eggs, and Vanilla.

Pour the liquid ingredients into the dry and mix well.

Then bake in your waffle iron and ta-da! Amazing waffles to freeze and toast for the week ahead.
